Chef Shaun Hill will be discussing the ideas from his new book Salt is Essential, at Topping & Company Booksellers in Bath next month.

 

On Monday 8th May, at 8pm, an audience will hear from Shaun about why we should go back to indulging in good honest food, with an emphasis on taste. Shaun has been a chef for over 50 years and has become widely-esteemed in the industry after cooking at a trio of Michelin-starred restaurants. In the past he has worked at Gidleigh Park in Chagford, the Merchant House in Ludlow and the critically-acclaimed Walnut Tree in Abergavenny.

He became a key figure in the world of food in the 1980s when he worked with Robert Carrier during the Modern-British food movement that fused local, seasonal produce with global influences. With his new book Salt is Essential he continues his work to encourage us all to eat tasty food rather than food that is made-for-television presentable but lacking in flavour. He wants to steer the focus on enjoying food, instead of the craze that has swept much of the nation of being extra careful about what's in our food, and choosing lacklustre low sugar or low salt options.

 

The recipes in his new book range from Warm Rock Oysters with Spring Onion Butter Sauce to Pork in Shirtsleeves and Buttermilk Pudding with Cardomom. Salt is Essential is not only a cookbook, but an informative and entertaining read, peppered with essays and advice. It would surely be an invaluable addition to every chef’s library, and every foodie's bookshelf.
